These don’t come with an explanation, but might as well list them anyway. I’ll add a few sentences’ description when I find the time.
squid (soaked):
squid (dried and shredded):
sea cucumber (dried): To use, wash and soak in water for one day. Place sea cucumber into fresh water and bring to a boil; turn off heat. When water has cooled, change to fresh water and repeat heating and cooling. Repeat the process 3 times a day for 2 days, until the sea cucumber has softened. Snip open lengthwise and remove intestines. Cover with water, bring to boil, remove from heat and let stand one more day. Now it’s ready. Directions from WC.
dried scallop: Super-pricey, but they’ll keep forever and even a little bit will add a beautiful flavor to a dish or soup. Soak them in warm water for 30 minutes until soft enough to shred with your fingers. My mom will buy a whole bunch of packets in Taiwan and bring them back as gifts for old friends: that’s how special they are. I found a great post on dried scallops here, if you’d like to learn more.
